Is there any ethnic food concoction that says (agro)biodiversity quite like smörgåsbord?

In the winter for the julbord, there is also reindeer. I went to a student julbord, so I ate some of the cheaper cuts like the heart, which is quite good smoked. The strange thing about Sweden for me is how easy it is to find reindeer and moose at the butcher, but other animals I encounter more often studying forestry like ducks (which I love to eat) and wild swine don’t seem to be on the menu at all. Some more recent dietary changes I’ve surmised from talking to Swedes include a decrease in fish consumption because of the Baltic’s condition and because young people aren’t so hot on herring. Also, recently the Swedish turkey company has been promoting their product quite heavily, so more and more Swedes are adding turkey to their holiday menus.

Ok, apart from pistic. Which anyway is only plants.
